I always keep a few cans of sardine in my kitchen larder, so that whenever I am a little lazy or too busy to cook, I just have to heat up the sardine and eat them with steamed rice. Furthermore, my kids also love to eat canned sardine in tomato sauce.
I would normally sautéed some onion slices until it caramelized, add in the sardine and use the empty can to add a little water. Sometimes if I have lime, I would add some lime juice to the sardine to reduce the strong fishy smell. Adding a little sugar would enhance the taste a little bit more.
So, how do you normally cook your canned sardine in tomato sauce?
i put in lots of big onions and lime too.. hmmmm..now i m drooling.. my malay colleagues used to fry potatoes to put in too.. make the dish larger.. serves more.. hahaa..

if i want to eat the sardines without having it on pan anymore, I preheat it in microwave and then season it with soysauce and lemon juice then over steamed or fried rice.
ReplyDeleteI cook it sauteed with garlic and onions add little water too just to make the sauce blend well and taste just right.
I also cook it sometimes sauteed with garlic and onions then put in pechay or bo chok leaves (chopped), you can also make use of other leaves like spinach or the like.

ReplyDeleteOpen a tin, put in a plate...slice shallots and chillis and sprinkle over the fish...and squeeze kalamansi lime over all that. Ready to serve! No cooking required! Yum! Yum! Best with Mariner brand but Ayam, not too bad!

ReplyDeleteServe with onion pickle - cut onions into rings, add chilli padi and mix with vinegar and sugar. Can prepare ahead and just heat up the sardine before mealtime. Alternatively, can cook with onion, curry powder and season to taste with tamarind juice and sugar.
