I love the savoury, creamy and granules like taste of salted egg yolk. I have eaten salted egg crab but not salted egg chicken. Salted egg crab has butter and cheese as some of the ingredients but the salted chicken recipe I experimented with is without these two. Anyway, my son loves the Salted Egg Fried Chicken, so I guess this recipe must have turned out ok! LOL!
Ingredients
Chicken, ½ bird, cut into small pieces
Flour Mixture, ½ cup of
Wheat Flour, ½ cup of
Rice Flour and ½ cup of corn flour
Curry Powder, 1 teaspoon
Curry leaves, 3 sprigs
Pepper, ½ teaspoon
Salted Egg, 1 pc
Baking soda, ½ teaspoon
Salt to taste (use sparingly, salted eggs are already very salty)
Put curry powder, baking soda, salt and pepper into the flour mixture. Separate the salted egg yolk from the egg white. Break the egg yolk into small pieces and mix with the flour. Dip the chicken in the salted egg white and coat it with flour mixture. Put curry leaves in hot oil. Deep fry the chicken in the hot oil until golden brown. Serve while still crispy and hot.
if minus the curry powder will work or not ah? I worry the kid wont eat. Looks very yummy leh.

smallkucing : 1 teaspoon very little only, wont' be spicy but you can opt out from using it because the curry leaves in oil would give it the same aroma. You can replace the curry powder with ketumbar and jintan putih powder.

ReplyDeleteThe salted egg white will only turned solid if you boil it. Unboiled salted eggs white are in liquid form.

Hi Jess, yes salted egg yolk is hard even if we did not boil it. Just break it into pieces using a fork....the salty grainy texture taste really nice on fried chicken or other fried food.
