Deep Fried Sole (Cynoglossus spp., Ikan Lidah, Tongue Fish)

I went to the wet market rather early last week and managed to buy some fresh sole or better known to the locals as ikan lidah (tongue fish). Ikan lidah belongs to the flat fish family, ie Soleoidei. Like its namesake, this fish do really look like a tongue! LOL! Tongue fish are normally deep fried until crispy or cooked with fermented bean paste. After cleaning the fish I decided to deep fry them. Unfortunately, I was busy cooking other dishes and my fish was a little burned! Anyway, the crispy fried sole still taste delicious! Evens the bones are crispy and edible!
How do you normally cook sole?

  1. Re the first photo, the fish eyes seemed to very close to each other. And it does kind of resemble a large tongue. Have never tasted this fish before though. Is it local?

  2. Mei Teng : Yes it is local. The fish fry looks like a normal fish but as it grow older the eyes will become nearer to each other and one fish become one sided...some call it ikan sebelah

  4. I don't think I have ever seen this fish when I was back home. It does look like a tongue. I love deep fried fish but have to cook this outside....too oily everywhere. Still too cold to cook outside. Can't wait for summer to be here.

    Do you go far and bear to sample good food?

    In Kluang, there is a sea food place where many Singaporeons drive all the way there to eat. My girls like the assam first. They alalso sell the crispy fish you feature here,

Sole can be done in so many ways...i normally like to prepare it steam or shallow frying...but most of the time steaming with its own juice....wrapped it up with paper or foil...chucked all the ingredients wrapped it up and baked in the oven....or a steamer...in the end as soon as you open it, drizzled it with peanut oil or sesame oil...serve along with the juice on a plate...best to eat on its own or with some leafy veges...
