The crunchy texture and savoury homemade keropok udang geragau makes a good snack especially during the World Cup Soccer season. When I was a kid, my mom used to make this using fresh Udang Geragau (shrimps). Fresh udang geragau are hard to find nowadays so I have to make do with dried udang geragau (shrimp) which can be bought off the shelf in many supermarkets.
Ingredients
Udang Geragau (shrimps), ½ cup
Rice Flour (Tepung Beras), 1 cup
Baking Soda or Eno, 1 teaspoon
Salt to taste Sugar, 1 teaspoon
Cumin (jintan putih) powder, ½ teaspoon
Mix all the ingredients and add water to make a batter. Heat up wok and put in vegetable oil for deep frying. Use a ladle to scoop the batter and pour it over the wok. Fry until the keropok turns golden brown. Drain away excess oil and serve while still crispy. The Keropok Geragau is a great condiment for Jawa Mee or just eaten as snacks. I love that crunchy look. I think I will munch non stop in front of the TV. Then I will worry the next day about my expanding waistline...then I will blame you for such a wonderful recipe...LOL
