Kentucky Fried Frog (KFF, Thin Kai, Microhyla achatina) Recipe

Fresh frog all cut and cleaned
If the famous Colonel was a Chinaman, then probably you will see Fried Frog instead of Fried Chicken franchises all over the world. LOL! The Chinese believe that frog has wound healing properties. Research is currently being carried out to find and extract the component of the slime on the frog skin which is suppose to be able to heal wounds. Frogs live in wet environment that are full of microbes but they are able to heal their wounds easily. I bought five locally caught paddy field frogs (scientific name, Microhyla Achatina) from the wet market today for RM20. Normally I would fry them kung po style but this time I took out some frog legs to deep fry them in flour. You can use any premixed fried chicken flour off the shelf or mix them by yourself.

Ingredients
Frog legs, 10 pcs
Flour mixture (equal portion of wheat, corn and rice flour), ½ cup
Pepper, a dash
Cumin powder, ½ teaspoon
Coriander powder, ½ teaspoon
Oregano powder, ½ teaspoon
Garlic powder, 1 teaspoon(optional)
Salt to taste
Paprika powder, ½ teaspoon
Soda bicarbonate, ½ teaspoon

Mix the flour with all the ingredients except the frog legs. Dip frog legs in the flour and deep fry them in hot oil until golden brown. Drain away excess oil and serve while still hot.
