Best way to detect Urea or Urine smell in Stingray before buying

Further to my post,Why Some Stingray have Ammonia, Urine or Urea Smell – How to get rid of it?, last weekend, I asked my regular fishmonger, where is the best place to smell a sting ray for foul urine or urea. He told me that since the leakage is cause by improper gutting which resulted in urea flowing from the kidney and glands into the fish flesh, the best place to smell is at the location shown by red arrows in the photo above. The arrows show the nearest part to these organs before they gut it and cut out the mid portion of the sting ray. Hope this tips are helpful in helping you to choose 'urine/urea' smell free stingrays!

Coffee Shop Talk with my American Friend - 3D Sex and Zen Movie



This is one of the many jokes I published about the adventure  I had with my American friend based in Malaysia......

One morning, my friend John was reading the newspaper in Ah Lian coffeeshop....

John : Hey Pete, do you think this 3D Sex and Zen movies is getting too much publicity?

Pete : Ya, I heard it is supposed to be the world first IMAX 3D Erotic film

John : Looks like it made Soari Hara and Vonnie Lui real hot in Google searchers these days.

Then, Ah Lian, the coffee shop owner joins in.......

Ah Lian: Aiya, Asian X-rated movies not "keng chow" (interesting) wan lah!


John : Why you say that?

Ah Lian : You know ah.....everytime the stars make love, it looks like the actress is sitting on the male belly lorr! What, making love to belly button meh?

Pete : Wah, you also watch this type of movies ah?

Ah Lian : Aiya, nowadays modern woman like me no more "Ah Lian" liao....equal to men...everything also can do......John laling (darling), am I right?

John : Huh, I guess so? Ah Lian, you know where can get the pirated version of 3D Sex and Zen ?

Ah Lian : Aiya, John laling (darling), why want to watch the movie, watch my 36D live lagi best! Want or not? We go for a date tonight! If you want the DVD, ask Ah Beng lah, he is very 584 (hamsap,horny,preverted), sure know where to get.....hey, Ah Beng, 3D Sex and Zen "Cheng pan" (original copy) got already or not?

Ah Beng : Not yet lah, where got so fast wan!

John : Never mind, I think I will join the tour package to Taiwan to see the movie.

Ah Lian : Wah, got 3D Sex and Zen movie tour some more ah?

John : Ya, since the movie is very likely not released in China, the tour agencies are cashing in on this 3D Sex and Zen movie package tour.

Ah Lian : Wah, lau leh, they really know how to make money.

Tomato Sauce Beef Balls Recipe

I came up with this recipe after Bananaz sent me this naughty and funny Schwetty Balls video. So this recipe is dedicated to you, my friend! LOL! see this funny video.....really hilarious (turn on your speaker!)...
TOMATO SAUCE BEEF BALLS RECIPE For beef ball recipe please click here, beef balls recipe Ingredients For Tomato Sauce Tomato Sauce,
3 tablespoons Onions, 1 pc, cut into four
Worhestershire sauce, 1/2 teaspoon (optional)
Salt to taste Sugar, 1 teaspoon

Put a little vegetable oil in wok and saute onions until fragrant. Add in the tomato sauce, salt, Worchestershire sauce and sugar. Pour in a little water. Bring to a boil. Pour the tomato sauce on the cooked beef balls. Serve with steamed rice.

Good Char Kueh Teow (Fried Flat Noodles) at Night in Kepong Baru Wet Market Area

My food hunting adventure went a little out of hand and I found myself checking out the dark alley of the Kepong Baru wet market at night. LOL! The area behind the old cinema (now Royal Restaurant) is bustling with activities during the morning but it is rather dark when night falls, especially after all the shop lots closed. There are a few sporadic stalls operating there at night. The Chap Fan (Economic rice) stall starts during dinner time and you can see many patrons tucking in the reasonably price food. I have tried the Deep Fried Pig Intestine porridge in one of the stall run by a lady;…….I love anything with deep fried pig intestine! Ha ha ha!
There are also a Wantan Mee Stall (worth trying but please be prepared to wait during peak hours!), Satay, Curry Mee, Chi Chow (Fried wok noodles) and a stall selling drinks. An elderly lady and her son operate a Char Kueh Teow stall directly behind the Royal Restaurant (old cinema). Although, there are no lap cheong, the char kueh teow taste very good and have very nice aroma. It tastes very similar to Penang char kueh teow. For RM3.80, the serving is very generous with Kuchai (Chinese) chives and fish cake added as well. If you don’t mind eating in a “wet market” environment, head towards Kepong Baru Market at night for some foodie adventure! LOL!

Happy Earth Day (hour)! Cheers!

I have been celebrating Earth Day (hour) for the last 3 consecutive years. We shut off the lights in the house after we came back from dinner at Top Kitchen, the restaurant in Manjalara that serves really nice Penang food. My wife lighted one candle in the house which is in the shape of a little teapot. The kids have some great time enjoying a slow moving, quiet and peaceful night. I sit back and slowly sip my "3 Amigos Beer" that the Roti Chanai Restaurant boss convinced me to buy earlier. Ya, Roti Chanai restaurant selling beer! Competition must have been stiff nowadays! LOL! He swear that it is very nice and smooth, so I bought 3 cans to try out. I think it was made under license from a Texas based company and manufactured in Vietnam. Actually Vietnam is famous for its' Ba Ba Ba beer (Ba means 3 in Vietnamese). I didn't come across this beer when I visited Ho Chi Minh. Ahhhh, all the good memories of Vietnam! LOL!

From Tuna Quiche to Egg Tart

Last night, I thought that I still some cans of Tuna fish in my larder and I wanted to make Tuna Quiche for breakfast. I prepared the dough earlier without realizing that I have used up all the cans of tuna fish. So, I ended making giant size egg tarts instead. LOL! I don’t really use exact measurement or fixed type of ingredients when making egg tarts or quiche or in my cooking, just estimate the amount of ingredients to use. This is because I normally have limited time at night to bake these before bed time. My three hungry children would keep on asking, “Can we eat now?’…ha ha ha. Normally they will eat whatever I cook for supper and leave some for breakfast the next morning. The best thing about cooking without a recipe is that you can let your imagination runs wild and even more interesting when you ended up with a completely new dish! Lunch Date at Little Penang Café, Mid Valley, KL

I met up with my good friend at Little Penang restaurant recently. Both of us are avid foodies but she often go for organic food nowadays. I have not been back to Little Penang for quite some time and I think the last time I was here when Mid Valley was newly opened. We didn’t realize that we actually ate so much food as we chat. LOL! The food we ordered are Jawa Mee, Siam Laksa, jiu hu char (Fried turnips), lobak(five spice meat roll) and fruit rojak (Local spicy salad, forgot to take photo). Wash down the food with 2 cold drinks and 2 coffee. The total bill came up to be around RM70 plus. I wonder how my lady friend manages to stay so slim all the time…..LOL!.

Restoran Yulek Yong Tau Foo, Lorong Durian, Taman Cheras

My Auntie insisted on buying lunch and brought me to this nice restaurant Yong Tau Foo and noodles restaurant in Cheras just beside Jalan Kaskas. She told me that this restaurant is already around when I first came to KL and my auntie has been their loyal customer for almost 23 years. Beside Yong Tau Foo (a variety of vegetable and food stuff with fish paste), Restoran Yulek also serves Lam Mee (Braised Noodles), Curry Laksa, Prawn Noodles, Soup Noodle, Pork Ball Noodle, Tomyam, Shui Gao Soup, oily vegetable, rice and curry chicken. Although the shop lot looked rather old, the place is clean and tidy. The tables, cutlery and cooking utensils are clean as well. The yong tau foo are fresh, firm and tasty! Nice clear soup.

We also had the lam mee (braised noodles) which has the right soup thickness and flavour. The spicy sambal belachan (fermented shrimp paste chilly) gave the noodles an extra kick…..yum yum!

Pormtip Thai Restaurant, USJ 19 Digital Mall

Sawadee Khrap. Sabai Dee Mai? (Greetings, how are you?) My sister in law gave my family a treat this restaurant which is located in the USJ 19 Digital Mall, Subang Jaya. The menu has a good choice of Thai food but unfortunately I could not find my favorite Mieng Kam, a Thai starter dish using Daun Kadok (wild betel leave, pointed pepper, sua lau heoh), with peanut, chilly padi, toasted coconut, ginger, shallots, dried shrimps, lime and sweetened fish sauce. So, we just settled for Somtam (unripe papaya saldd). The total bill for 2 Tomyam Kung (1 big, 1 small), Basil Chicken (small), Choy Tam(small), Kangkung (small), Sweet and Sour tilapia (large), Claypot Tofu (large), Somtam (small), 2 Fried Rice (no photo) and Drinks came up to be RM180. Here are the food we ate. Cone shaped rice! STP, I know what you are thinking, ha ha ha!

The Tom Yam Kung is very spicy, sourish and full of flavours. I like it very much.. This is a good way to whet my appetite and eat more rice. I drank the soup till the last drop! LOL!

Fried Kangkong (water convolvulus) Belachan (fermented shrimp paste). Basil Chicken and Fried Choy Tam (Baby Brussels Sprouts). The Basil chicken is tasty and have very nice basil leaves aroma. My wife loves this dish. The fried choy tam has a wonderful wok hei (wok burn smell) aroma. There is nothing to shout about the Belachan Kangkong.

We decided to go for sweet and sour tilapia (St Peter’s fish), so that the kids can also eat it because it is not spicy. The flesh is fried until crispy and taste real good with the sweet sour sauce!......left just the head!

Som Tam (unripe papaya salad) with funny tasting lime juice drink with rose flavour! The som tam so so (ok) only, but I like the fresh crunchy long beans!

The kids need to have something that is not spicy, so we ordered claypot tofu again! No comment, Mai Phean Rai (never mind), just makan (eat)! LOL!

Steamed Stingray (Skate, Pari, Tuka) with Salted Vegetable (Ham Choy, Kiam Chye) Recipe

I remembered that I have this recipe sitting in my hard disk after Alice requested for non-spicy stingray recipe for her kids. Actually, if the stingray is fresh, you can steam it like other fishes or just fry them with turmeric and lime juice. I have tried the recipe below with fresh Tuka (small stingrays) that I bought from my fishmonger from Sg Besar. The flesh of Tuka is very sweet and tasty! The chilli is optional. Here is the recipe, Alice. But better don’t let the kids eat too much ya, because of the Urea content in stingrays.

Ingredients
Fresh Stingray, 1 fish
Salted Vegetable (Ham Choy), 2 leaves, cut into strips
Ginger, 5 slices
Garlic, 3 cloves, chopped finely
Olive oil, 1 teaspoon
Salted plums, 2 pcs, crushed
Chilly or chilly padi (optional), 1 pc

Put tuka (stingray) in a steaming tray. Add all the ingredients to the stingray. Steam the stingray at high heat for 25 minutes. Garnish with parsley. Serve while still hot. Note : I didn’t use salt or light soya sauce because salted vegetable and salted plums are already very salty.

Why Some Stingray have Ammonia, Urine or Urea Smell? How to get rid of it?

Alice Law and SuiTuaPui commented about their experience with Ammonia smell in stingray at my post, Simple spicy Stingray with Butter and Masala Recipe. I have once bought a stingray that reeked of urine smell and no matter what strong spices I used, the smell is still there. There are several reasons why stingrays have urine, urea or ammonia smell. Stingray is a cartilaginous fish related to the shark. Their body and tissues are designed to be isotonic with sea water. In order to do so, stingrays and shark kidneys are designed to excrete urea into the body tissues. Therefore, when their body is in osmotic balance with sea water, they can prevent water loss from the body cells. When a stingray dies, bacteria will break down the urea compound and turn it into ammonia. This explains why stingrays that are not fresh have very strong ammonia smells. Fresh stingrays have clear bright red coloured blood and those that are not fresh would normally have darker red blood. Since ammonia is alkaline, soaking the stingray in light cooking vinegar which is acidic would neutralize it into salt and water. A possible reason for Stingrays to have urine or urea smells is very likely that they are not gutted properly. The person handling the fish might have accidentally cut the kidneys and other organs that have high urea content. The urea can leak into the flesh, thus contaminate it. Since urea is acidic, soaking the stingray in Sodium Bicarbonate (Baking soda) which is alkaline might help to rid off the urine smell. So, the questions is, how do we know the smells is from ammonia or urea? If the fish doesn’t look fresh and have a nose piercing smell that very likely it is from the ammonia. If the fish is fresh and have clear bright red blood colour, then the smell is very likely from the urea content. I was lucky to have only one bad experience with stingray with terrible odour. Whenever I buy stingray, I would smell it first and check the blood whether is clear bright red in colour. Please note that you might not see much blood in stingray cut after the fishmonger washes them. This doesn’t mean that they are not fresh. It is always good to ask the fishmonger for advice. I normally buy fish from a few fishmongers that I know are reliable and have been my regular supplier for years. This really helps a lot in ensuring that I get the best fish. Simple Spicy Sting Ray with Butter and Garam Masala Recipe

If you notice, I have been publishing many simple stingray recipes in this blog. It is obvious that Stingray is my favourite fish! I used to go fishing for sting ray. It is very exciting to see the hooked stingray trashing out of the water into the air. Stingray give anglers really good fight! They can be found in sandy areas like Pulau Pangkor and around our tropical water. Although stingray is a salt water fish, some fresh water stingrays have been found in our Pahang river. Fresh stingrays are very sweet and it is just heaven to bite into the firm flesh! Delicious! I experimented with the combination of coarse dried chilly powder (serbuk cili kasar kering) and butter in this recipe. For those of you who likes spicy food, this is for you!

Ingredients
Salt water Stingray cut, 15 small pcs
Coarse dried chilly powder (chilly kasar), 2 tablespoons or more
Garam Masala, 1 teaspoon
Oyster sauce, 1 tablespoon
Butter, 1 tablespoon
Salt to taste
Sugar, ½ teaspoon
Vegetable oil for frying

Marinade sting ray with chilly powder, garam masala, oyster sauce, butter and salt. Heat up wok and put in the vegetable oil. Put in the marinated sting ray. Stir fry using medium heat until the sting ray is cooked. Add sugar and stir for a short while until it dissolves. Serve with white rice while still hot.

Steamed Patin Fish (Catfish, Pangasious) with Special Soya Sauce Recipe

Patin fish is popular among most diners in restaurants but not many people would buy it fresh from the market to cook. There are many negative publications against this type of catfish (patin). Actually all species of catfish would eat virtually anything. Temerloh in Pahang is famous for it’s’ patin fish minus the mud smell which is common among freshwater fish that is caught in the wild. Patin fish have very fine flesh and full of fish oil. It is actually a very tasty fish. I bought this nice table size patin from the market and decided to steam it with light soya sauce. This recipe is similar to the brown sugar steamed fish recipe that I published recently.

Ingredients
Patin fish, 1 table size
Ginger, 2”x1”. Cut into strips
Garlic, 5 pcs, chopped finely
Light Soya sauce, 5 tablespoons
Sesame oil. ½ teaspoon
Vegetable oil
Parsley for garnishing
Sugar, 1 teaspoon

Put fish in steaming dish and add a few slices of ginger. Steam the patin fish under high heat for 25 minutes. You can prepare the sauce while the fish is in the steamer. Pour 2 tablespoons of vegetable oil in to the frying pan. Sauté ginger and garlic until fragrant. Add light soya sauce, sesame seed oil and sugar. Add some water if the mixture is too salty. Pour the sauce on the steamed fish. Garnish with parsley and serve while steamed patin is still hot.

Very Tasty Bubur Gandum Stall in Jalan Kg Benggali, Butterworth

These are the most delicious Bubur Gandum (sweet wheat porridge) and bubur kacang (sweet green mung beans porridge) that I ever tasted. My sister bought two packets of the porridge for me on my recent trip back North. This mobile stall has been operating outside the Federal Hotel (no relation to the KL Federal Hotel) restaurant which behind the Butterworth Cathay cinema for ages. I have not seen the old Indian owner around for quite some time. Very likely he employs this lady to take of the stall for him. However, the bubur gandum (RM1.50) and bubur kacang (sweet mung beans porridge, RM1.50) are still as tasty as ever. The porridge is very creamy, thick and has nice aroma. It has a very well balanced taste of sweetness and a little saltiness in it. It sure tastes very much different and unique from the ones you find elsewhere. Another thing I like about this stall is that the pots and metal bowls are very clean. After eating one bowl of the bubur gandum, you are sure to go for second helping. Damm tasty! LOL!Highly recommended! Be sure to try out the bubur gandum from this stall if you visit Butterworth.

Our earth is constantly being bombarded with cosmic rays. Lucky for us, our earth atmosphere and ozone helps to reduce the radiation level. But then, once a while, some very high energy particles do squeeze their way through these layers and bombarded earth. Deep Fried Ikan Bebolos (English name Whiting Fish, Scientific Name Merlangius Merlangus) with Spicy Soya Sauce Recipe

This salt water Whiting Fish is known locally in Malaysia as Ikan Bebolos. It inhabits the shallow areas around 20 to 30 meters away from the shore. This longish shaped fish can be easily caught using a line and small hook. It is very interesting to catch these fishes using light tackles. The live fish is silver white in colour. I came across a vendor selling these fishes at the Kepong Baru wet market. You can deep fry the fish with or without flour batter. I choosed the former!
Ingredients
Ikan Bebolos (whiting), 10 pcs, cleaned Oil for deep frying

Sauce
Chilly padi (bird eys chilly), 3pcs, chopped finely
Shallots, 3 pcs, cut onto slices
Lime juice for 2 limes
Sugar, 1 teaspoon
Light soya sauce, 2 tablespoons

Dry bebolos with paper napkins. Deep fry the bebolos in hot oil until it turn golden brown. Take out the fish and drain away excess oil. Mix all the sauce ingredients together. The taste of deep fried bebolos (whiting) with the spicy chilly sauce is just heavenly!

Will the Radiation Fallout in Fukushima Japan Reach Malaysia or Spread? How Nuclear Reactor Works, Prevention and Symptoms of Radiation Exposure.

Everyone is worried about the radiation leakage in Fukushima, Japan spreading to other countries. To understand the situation, let’s take a look at the basic operation of a nuclear reactor. A kilogram of Uranium in nuclear reactor can generate 3 million times more energy than a kilogram of coal. It is a clean and efficient way of generating power for a country like Japan which has limited natural resources. However, this is only true if we can effectively contain the radiation in the reactor itself. When Uranium absorbs a neutron, a nuclear fission will occur. The uranium will splits into lighter isotopes, Barium and Krypton. The free neutrons generated will react with other uranium and this would cause other reaction which is known as nuclear chain reaction. These reactions produce thermal energy which is then harvested to for electricity production. Moderators like light water, graphite or heavy water are used absorb some of these neutrons to control the reactions in the reactor.

When there is a leak or explosion in a nuclear reactor, radioactive particles or dust are carried by the wind in to the atmosphere. The contaminated water from these reactors can also leak in to our water system. Decaying radioactive material produces ionizing radiation that interferes with our body chemical system which in turn would lead to cancer. Accumulation of radioactive iodine in our thyroid gland can cause thyroid cancer. However, taking potassium iodide (KI, Iostat®, ThyroBlock®) pill can obstruct the accumulation of this radioactive iodine. Radioactive iodine has half life of 8 days and it is not as dangerous as Cesium (Cs 137, half life 30.07 years) which has a half life of around 3 decades and Strontium (Sr 90, half life of 28.78). Therefore, there is a serious danger of our food chain being contamination by these radioactive materials. The amount of damage to our body corresponds to the level of radiation that we are exposed to. The common long term illnesses are cancer, tumours and genetic mutation. A single acute exposure common symptom includes nausea and vomiting. Other symptoms are hair loss, diarrhea, bloody vomiting, fever, fatigue, headache, dizziness and disorientation. Severe exposure of 6 to 8 Sv can result in death in most cases. The time within exposure and the appearance of the systems is an indication of the level of radiation absorbed by the body. The best ways to prevent exposures are time and distance. Distance would reduce the dose rate and time as well because of the half life of radioactive isotopes decays. As long as the wind from Fukushima, Japan is not blowing into our way or the water system is not flowing to our country, the chances of exposure to this radioactive contamination would be minimal. Special Steamed Garoupa Fish Cut with Brown Sugar Sauce and Ginger

This healthy recipe is very easy to prepare. I did not deep fried the Garoupa fish but steamed it. In order to reduce the fishy smell you can add Chinese ginger wine or just pieces of ginger to the fish before steaming it. This is the first time I tried using Brown Sugar instead of normal sugar for fish sauce and it turned out quite nice. The taste is rather unique! LOL!
Ingredients
Grouper Fish Cut, 2 pieces
Ginger slices, 5 pcs or Ginger wine, 1 tablespoon
Ginger,2" lenght, cut into thin strips
Garlic, 3 pcs, chopped finely
Brown Sugar, 1 teaspoon
Light Soya sauce, 2 table spoons
Olive oil or any vegetable oil
Spring onions and celery for garnishing Put ginger slices or ginger wine on the fish.
Steam for 20 minutes under high heat.

While the fish is in the steamer, you can prepare the sauce. Pour 2 tablespoons of olive oil in a pan. Saute ginger strips and garlic until they turned golden brown. Add the soya sauce and a little water. Put in the brown sugar and bring to a boil. Pour the sauce over the steamed Grouper fish. Garnish the Brown Sugar Steamed Garoupa Fish with spring onions and celery before serving.

Braised Maggi Curry Mee Recipe, Singapore Heh Mee (Prawn Noodle) Style

I have not travelled to Singapore for quite some time already and I missed the Heh Mee (Prawn Noodles). The Singapore Heh Mee is different from the Prawn Mee (Hokkien Mee) that we have in Malaysia. The Singaporean version is actually fried egg noodles with prawns and a little starchy gravy. Since I have some shelled prawn and Ipoh taugeh (bean sprouts) in my fridge, the idea of cooking something similar to the Singaporean Heh Mee came to my mind. I added a little of the curry soup stock from the Maggi Instant curry mee to give the dish some spicy "kick".
Here how I cook the Braised Maggi Curry Mee, Singapore Heh Mee Style.
Ingredients
Maggi Curry Instant Mee or any other brands, 1 packet, soak noodle in hot water till soften
Shallots, 2 pcs, cut into slices
Taugeh (Bean sprouts), 1/2 cup
Spring onions, 1 stalk, cut into 1 " length
Eggs, 1pc
Prawns, 5 medium size, shelled (not shelled is ok)
Water (1 cup) and Corn flour mixture (4 teaspoons)
Dark soya sauce, 1/4 teaspoon
Light soya sauce, 1 teaspoon
Salt to taste
Heat up wok and put in some vegetable oil . Fry the shallots slices until they turned crispy. Take out the shallots and put them aside. Put prawns and eggs in the hot oil. Stir fry them for a short while. Add the soften maggi instant noodles. Pour in the light soya sauce and dark soya sauce. Add Taugeh (beansprout). Fry the mee (noodle) until it is cooked. Take out the fried noodle and put it on the serving plate. Pour the water and corn flour mixture on the pan. Keep on stirring it until the soup thicken. Add maggi curry mee stock, salt to taste and bring to a boil. Pour the soup on the fried noodles. Garnish with spring onions and deep fried shallots before serving. Happy Supper Time!

On the Curry Mee (Noodles) Hunting Trail with Bananaz - Restaurant 999

Both Bananazஇ and I love to eat curry mee (noodles), especially Penang style curry mee or sometimes known as white curry mee because of the white soup base before the addition of chillies. Our 2nd curry mee food trail took us to Desa Aman Puri in Kepong. I have blogged about Restoran 999 in one of my earlier postings. This is the place where I get my usual 'shot' of Penang Curry Mee. I have been eating the curry mee from this stall for the last 11 years! Very faithful customer ya? Apart from curry mee, this very stall in Restoran 999 also serves very delicious Penang Lor Mee (Soya sauce braised noodles). Bananaz all dressed up to eat curry mee.......beside Desa Aman Puri road side, LOL. Luckily there are many trees around this area, so the place is not so hot in the afternoon. Sorry ya, Bananaz, next round, we go for Ipoh style Curry mee in a more comfortable restaurant near there, ok? Actually, Bananaz dressed up for an important appointment which is suppose to be right after our curry mee lunch.
Bananaz curry mee. I guess he opt out from having the coagualated pig blood and see ham (cockles). Look at the nice chilly paste in the spoon. Once you stir it into the soup, the whole bowl of noodles would turned bright red. Taste very delicious. Yum yum!
