Shortcut Butter Chicken Rice, Everything Nice (Recipe)

I would cook Chicken Rice whenever the kids grew tired of eating the usual steamed rice with dishes. As it would take some time to prepare the chicken broth for the rice, normally I don’t use this method to prepare the rice. For the chicken sometimes I would just steam it and if time permits I would prepare roasted one. Here is my recipe for a Shortcut Butter Chicken Rice

Ingredients and Instruction
Chicken Rice
Rice, 2 small cups
Butter, 2 tablespoons
Garlic, 5 cloves
Turmeric, a dash
Pandan leaves (screwpine), 3 pcs
Salt to taste
Chicken Broth (optional), enough to cook rice grains

Put the rice in a rice cooker and add around 1cm of water (or chicken broth) above the rice (the water added depends on the grade and age of the rice you use, so please vary the amount of water). Add in the butter, garlic, turmeric, pandan leaves and salt. Press the cook button.....Butter Chicken rice on the way! Garnish rice with cucumber slice before serving. Chicken ½ Chicken, Steam the chicken in high heat for 20 minutes. Take out and the chicken in cold water for a short while. Then continue steaming the chicken for another 10 minutes.

Chicken Rice Chili
Fresh Chilli, 5 pcs
Garlic, 5 cloves
Ginger, Optional
Salt to taste
Lime juice from 3 limes
Sugar to taste

Put all Chicken rice chilly ingredients in blender and blend until all ingredients turned fine.

Chicken Rice Soya Sauce
Garlic, 3 cloves, minced
Light Soya sauce, 7 table spoons
Sesame oil, 1 table spoon

 Heat up wok and add in the sesame oil. Sauteed garlic until fragrant and add in the soya sauce. Add a little water to vary the saltiness according to your taste.

Mr. Tham, my buddy is always on the lookout for any new restaurant around PJ area. Knowing that I am Foodie and into blogging about food, he would invite me to try out any good food around here. He told me that the famous Taman Connaught Clay pot Chicken rice has opened a branch in Taman Paramount and we set an appointment to meet up for lunch. When I arrived at the place around 11.40am, Tham and his wife were already there waiting for me. Actually, Restoran Gafan owners have set up this branch around seven months ago and it is managed by a husband wife team, Coco Chia and Vincent Leong. The place is brightly lit, need and clean. It is nice to have a good meal in such an ambient environment away from the afternoon heat! We ordered a pot of Salted Fish Chicken Rice, a pot of Drunken Chicken Rice, Deep Fried Bean curd, Green Spinach, Lotus Roots with Peanut soup and 3 glasses of Herbal Tea. The mui heong (mergui) salted fish is fresh and nice. Vincent told me that it is bought from their regular supplier in Kuantan and they would personally drive all the way there to select the mui heong salted fish. Nothing beats the nice aroma and flavour of salted fish mixed with perfectly cooked clay pot chicken rice. Restoran Gafan uses free range chicken to cook the chicken rice. The free range chicken meat is tender and quite lean. Free range chicken is a healthier choice than mass commercially farmed chicken in cages. We finished the first pot of Salted Fish Chicken Rice rather fast. The next dish was the Drunken Chicken Rice, Mrs. Tham’s favourite. The nice aroma of Chinese Cooking wine (Shou Sing Chiew) permeates the air when this dish arrives. The crunchy onions blends well with the wine and well marinated chicken. Thumbs up for this dish! I was told that the chicken rice is cooked using good quality non-stick claypot. It is easier to clean than conventional claypot. It is good know that I am eating out from a well cleaned claypot! The crispy fried tofu taste good with the homemade chilly sauce. The outer skin of the tofu is crispy but soft in the inside. It is made from blending a few ingredients and compressed before they are cut and deep fried. The double boiled Lotus roots with peanut soup have lots of natural sweetness in it. I noticed that there is a generous amount of chicken breast meat in it! The Green Spinach has a nice texture because only young leaves and shoots are used. The saltiness of this dish is just nice and I ate most of the vegetables! It tastes good with the crispy fried garlic garnish.
As we were eating our lunch we can hear the friendly and generous boss, Vincent asking his wife who was taking order from a table next to us to add more salted fish for a customer that just ordered his food. He seems to be able to remember what his regular customer preference is! Restoran Gafan signature dish is the Mutton Claypot Rice (RM10 for small claypot and RM19 for large) , Sausage Chicken Rice (RM8 for Small, RM14 for large), Salted Fish Chicken Rice (RM7 for small and RM13 for large) and Drunken Chicken Rice (RM9 for small and RM16 for large). I will be back here again soon to try out the Mutton Claypot Rice and Sausage Chicken Rice!

The Chicken Rice Shop, Tesco Mutiara, PJ

Initially, I wanted to drop by in Atria, Parklin vegetarian stall but somehow I would not find a place to park and then remembered that I have to buy some groceries, so I ended up in Tesco Mutiara instead. I couldn’t make up my mind of what I should have for lunch when I reached there. Anyway, I ended up having my meal in The Chicken Rice Shop. This chicken rice restaurant chain was started by a daughter and mother team. I used to frequent their outlet and HQ in Dataran Prima, PJ near my previous work place. My favourite dish is the braised chicken. I ordered a single braised chicken with rice and a glass of iced Chinese tea. The braised chicken was very flavourful, tender and nicely marinated with soya sauce. The total bill came up to be RM9.60. I guess you pay more for the ambient restaurant environment and also the consistency in the quality of food served. Do you think our home grown restaurant chain have a good chance of expanding their franchise network overseas?

Thian Heong Roast Pork and Char Siew Rice, Cheras

I went to Cheras Leisure Mall for an appointment the other day and I took the opportunity to drop by Thian Heong again to eat the Char Siew/Siew Yoke Rice. I have not been back here for almost a year already and the place still looks the same, except I don’t like the floor which is too slippery. Anyway I ordered a plate of char siew and siew yoke (roast pork) rice. For side dishes I opted for a small bowl of sweet and sour Chap Suet soup. The roast pork and char siew tasted ok. The chili sauce is spicy and nice, taste good with the roast pork. I don’t really quite like the Chap suet soup because it is a little too sweet. The chef did not manage to get the sourness and sweetness right. I finished my lunch with a glass of iced herbal tea. All these cost me RM9.60. Reasonable price? Restoran (Restaurant) Ayam Bing, Taman Sri Rampai, Setapak, KL

After our early morning appointment in Kompleks Antarabangsa, my business partner and I decided to go to Sang Kee, Kg Pandan to eat the Pork Ball Mee. Unfortunately, Sang Kee was closed, so we hopped over to Tesco Ampang to eat the mee rebus (local Malay spicy noodles) atRestoran Nasi Kandar Che Abang Kepala Batas. What luck, the mee rebus is not ready yet, because it is not yet buka puasa time. We were determined to have some good lunch since we are alrealy in this area. So, next stop, we went over to Taman Sri Rampai to eat at Restoran Ayam Bing. The name Bing reminds me of the famous actor Bing Crosby! LOL! It was early, so there were not many customers around. My business partner ordered roast pork with rice and I went for roast chicken with roast pork. The total cost came up to be RM9.00. The roast pork in this restaurant is very nice and crispy; almost compatible with the famous one in Wong Kee Pudu. The roast chicken tasted ok and it goes well with the spicy, sour and sweet chilli sauce. My business partner kept on topping up the chilli sauce in her small saucer! The char siew is quite nice too. Classic Chinese Claypot Chicken Rice Recipe

This is another dish I would cook whenever I am a little lazy to prepare a complete meal for my family. I just have to marinade the chicken and then put them on top of the rice. Then I can serve the food for my family to eat within half and hour. For additional taste I actually fried some fried Chinese Sausage to go a along with the Claypot Chicken. It would taste better with the addition of crispy fried salted fish but I don’t have any in my fridge at that time.

Ingredients
Chicken, 10 pcs
Rice, 1 ½ cup, add water until 1cm above the rice before cooking

Marinate
Light soya sauce, 2 tablespoons
Dark soya sauce, 1 teaspoon
Sesame Oil, 1 teaspoon
Salt to taste
Pepper, a little
Five spice powder, 1/2 teaspoon
Chinese cooking wine, 1 teaspoon
Oyster sauce, 1 tablespoon
Corn flour, 1 table spoon
Marinate the chicken for around 10 minutes.

Meanwhile, cook the rice in claypot until the water almost dried up then put the marinated chicken on top of it. Cover up the claypot and continue cooking the rice until the chicken is cooked. Garnish with spring onions and serve.

Hock Tong Hong Rawang Chicken Rice

Rawang is a small town located at the north of Kuala Lumpur and it is a favorite haven for food lovers. It is normal to see many people from Kuala Lumpur and surrounding areas travel there during the weekends for their famous tilapia dishes and also winter melon soup. If you use the trunk road to travel to the northern states, do drop by in Hock Tong Hong Chicken rice which is located two rows at the back of Bintang Rawang Hypermarket. The chicken rice dish served by a husband and wife team is simple but nice. The chicken was well marinated and the rice was moist, just nice to my liking. I love the chicken rice chili, real spicy and nice. My business partner, Shirleen asked for extra chilies. A plate of chicken rice cost RM3.50. This stall also serves some other simple chap fan dishes and most of the chicken/roast pork/char siew will be sold out by 2pm. Will be back again to try the roast pork! Thian Heong Restaurant Taman Segar – Duck, Chicken and Barbecue Pork Rice.

Duck Rice best eaten with lots of chili............The restaurant occupies 2 shoplots It has been quite some time since I last visited Leisure Mall in Cheras, Kuala Lumpur. There is a Barbecue meat rice shop in this area that I have not been back to for quite a while. Thain Heong has a variety of barbecue dishes like duck, chicken, char siew(sweet pork), sesame seed meat, barbecue ribs and Chinese barbecue liver sausage. You can also order side dishes like double boiled soups. It was still early when I reach there and there were only 4 to 5 patrons inside the restaurant. I ordered duck rice and it was served with complimentary soup. The duck that was served with sweet sauce tasted ok. One thing I like about this restaurant is they leave the chili in containers on the table and you can help yourself to it as much as you can. I wash down my lunch with the ginseng roots drinks. Will be back to try out the other barbecue meat. *Note : I lost the data that I gathered on this restaurant. I will update this post when I go back to this restaurant again.
