Best way to detect Urea or Urine smell in Stingray before buying

Further to my post,Why Some Stingray have Ammonia, Urine or Urea Smell – How to get rid of it?, last weekend, I asked my regular fishmonger, where is the best place to smell a sting ray for foul urine or urea. He told me that since the leakage is cause by improper gutting which resulted in urea flowing from the kidney and glands into the fish flesh, the best place to smell is at the location shown by red arrows in the photo above. The arrows show the nearest part to these organs before they gut it and cut out the mid portion of the sting ray. Hope this tips are helpful in helping you to choose 'urine/urea' smell free stingrays!

LOL... so paiseh, I enlarge the picture still don't have any idea which part it's about, I'm definitely not good with fish anatomy! Never mind, I'll keep smelling it next time I come across it to prefect my skill!^-^

Pete, usually mak isah spread asam jawa over the cut stingray (which is already washed), wait for 5 minutes or so then washed them under running tap water to wash away the smell.

Only then I cook it.

Hi, Pete, greetings from Adventures of Juan Or and Mommy! Often see your comments in Small Kucing's blog. Thanks for sharing the tip. It's definitely a useful tip. I remember hearing from my mother long time ago that she discovered how not to accidentally choose smelly stingray is by smelling it. Only thing is that she didn't say exactly where to smell it. Now I know, thanks to you! :-D

Thanks for the valued information, i want to ask: (1) will soaking in vinegar effect on the taste of fish. (2) how if we put baking soda and vinegar altogether to soak the fish. (3) quantity of vinegar to be mixed in the water?

ORB : 1)yes, a little. The flesh will be softer depends on how long you soak it in. 3 tablespoons with 1 cup of water. Soak for around 5 minutes. But the result would depends on how much the contaminants is in the flesh
2) Soda and vinegar both together will not be effective.

So, the best way is still to smell the fish before buying it.

Pete: I have tried a lot, even sometimes flesh doesn't smell but it smells during or after cooking, may be next time I should supervise the gutting and make sure that the kidney is removed properly, Btw... somebody told me that sodium meta bi sulphate can also help but don't know weather its safe to use.
