Simple and Light Chicken Porridge Meal (Recipe)


As usual, whenever I steamed chicken, there would always be leftover chicken breast meat.  My kids would eat all of the other chicken parts except the chicken breast meat. Since it was a Sunday morning and my kids get to slept in, I woke up early to cook chicken porridge with these leftover so that we do not have to go out for breakfast or else it would have been very near to lunch time by the time they woke up.

Here is my simple and light chicken porridge recipe.

Ingredients
Steam chicken meat (or fresh meat), 200 gms
Rice, 1 cup
Sesame oil, 1/2 teaspoon
Light soya sauce, 3 tablespoons
Garlic, 5 cloves, chopped finely and saute until golden brown (for garnishing)
Salt to taste
Pepper to taste
Spring onions for garnishing

Wash rice and put them into a pot. Cover the rice with around 5 cups of water.  Cook rice at low heat until they turned soft. Add water if it is too dry. Put in the chicken meat, sesame oil, light soya sauce, pepper and salt to taste. Cook the porridge for a short while. Garnish with spring onions and fried garlic before serving.

Roast Pork with Sweet Potato Porridge Recipe

I came across some nice Roast Pork bones being sold at the wet market. Roast pork bones are normally used in cooking porridge. However you must carefully wash away any small bones fragments that are still intact to the bones and meat when the seller chopped it with the chopper. For extra sweetness, I added a few nice orange coloured sweet potatoes into the porridge.

Ingredients
Roast pork bones, 600 gms
Sweet potatoes, 2 pcs, cut onto large chunks
Garlic, 5 pcs, chopped finely and fried until golden brown
Rice,1 cup
Water Light Soya sauce, 2 tablespoons
Spring onions, for garnishing
Salt to taste
Pepper to taste

Put rice and water into a pot. Boil until the rice softens. Add in the pork bones, sweet potato and light soya sauce. Boil for another 20 minutes. Add pepper and salt to taste. Garnish with spring onions and fried garlic before serving.

Roast Duck Fried Rice Recipe

I love roast duck skins. They are very tasty and full of flavours. I thought the roast duck meat would help to enhance the flavour of my fried rice. For better result you might want to consider using overnight leftover rice that is kept in the fridge. This type of rice is dry and would not stick to each other. Therefore it would be suitable for frying.

Ingredients,
Garlic, 5 pcs, chopped finely
Light soya sauce, 2 tablespoons
Roast duck meat, ½ cup
Rice, 3 bowls
Salt to taste
Egg, 1 pc
Mixed frozen vegetable mix (corn, carrot & green beans), ½ cup
Vegetable oil

Heat up wok and pour in around 1 ½ tablespoon of vegetable oil. Saute garlic until fragrant and add in the rice. Add light soya sauce, salt, duck meat(thanks Christine for reminding me, LOL) and frozen vegetable mix. Make a clearing in the middle of the wok and put in a little oil. Crack the egg and pour it in to the wok. Stir fry for a while until all the ingredients are well mixed. Serve while still hot.

Making Makisushi with leftover Fried Eggs with French Beans and Onions – Recipe

When I had some leftover fried eggs with beans and onions, I know it is time for me to take out my makisu (巻簾, bamboo rolling mat) to make some sushi rolls (makisushi). It has been quite some time ago since I last made sushi for my eldest son. He loves sushi and this is a good way for me to make good use of the leftover food I have. I did not use the short grain Calrose rice but just improvise with some leftover rice from dinner. Generally you just need rice, condiments, nori (seaweed sheets), a dash of vinegar (normal or sushi vinegar) and a little salt to make Makizushi (巻寿司, rolled sushi) or makimono (巻物, variety of rolls).

Ingredients
Calrose rice (or normal rice), steamed or cooked
Sushi Vinegar (or normal vinegar), a few drops
Salt, to taste
Nori (seaweed wrappers)
Fried Eggs with French Beans and onions

Put a few drops of vinegar into the rice and stir it until well mixed. Add salt to taste. Put nori on the makisu (bamboo rolling mat). Put the fried eggs on the nori. Add rice and roll the nori to compress the rice so that it will not all off when you cut the makisushi. Cut the sushi and eat with a little wasabi (horseradish with mustard powder) with soya sauce or shoyu.

Sweet Potato and Long Beans Rice Recipe – My Avatar Purple Rice!

This recipe is actually similar to the yam rice that I posted a few months back. I used purple sweet potato to cook this dish and the colour seeps into the rice grain. Gosh, I have been using purple sweet potato in my cooking very often recently, it must have been the Avatar movie after effect on me! LOL! My daughter was a little apprehensive when she saw the purple coloured rice but my son ate a whole plate. It tasted ok to me. So I guess I will need my readers to try it out so I can get a third party opinion.

Ingredients
Rice, 1 ½ cup (serve 4)
Long Beans, 3 pcs, cut into small pieces
Sweet Potato (or yam), 1 pc, cut into cubes
Shallots, 5 pcs, cut into slices
Dried Prawns, 2 table spoons
Chicken Meat (or Pork Belly Meat), 100 gms, cut into small cubes
Oyster sauce, 1 tablespoon
Dark Soya Sauce, 1 teaspoon
Parsley and Spring Onions for garnishing

Heat up wok and put in around 2 table spoons of vegetable oil. Put in the shallots and fry until they turn golden brown. Take out the shallots and put it aside. Put dried prawns and fry for a short while. Add in the chicken meat (or pork belly). Put the rice in the wok and add dark soya sauce. Fry until the rice and dark soya sauce are well mixed. Add salt to taste and oyster sauce. Put in the long beans and sweet potato. Cook the rice in rice cooker or steam it just like cooking normal white rice. Garnish with deep fried shallots, parsley and spring onions before serving.

Pickled Salted Vegetable (Ham Choy) with Chicken Clay pot Rice

My Aunt gave me a bottle of home made pickled salted vegetable. In addition to the salted vegetable (ham choy), there are cili padi, garlic, bits of chillies, sugar and ginger inside the jar which is filled up with vinegar. I like to take these pickled vegetable with porridge or rich and oily food. I always like sour and spicy food, so it really suits my taste! Recently, I cooked steamed Claypot Chicken Rice and ate it with the sour picked vegetables. I scooped out a serving portion and drenched it with light soya sauce to take away a little of the sour taste. The final verdict?.......Nice combination! Writing this post really makes me drool! Marmite Bak Moi (Pork Porridge) with Pan Roasted Groundnuts – Recipe

Sometimes it is good to take something light so that our stomach can rest a little! I would cook porridge quite frequently because, my wife is a fan of porridge but I am neutral. Last week, I prepared this bak moi (pork porridge) and ate it with roasted groundnuts. Normally I would just buy the groundnuts from the kacang putih (Indian snack vendor) man because frying your own groundnuts can be a little tedious. But then, it is cheaper for me to fry it at home. The portion you see in the picture would have cost me RM6 (USD 1.80) if I would have bought it from the kacang putih man. My cost for the raw peanut is only around RM0.70 plus a little work to fry it until crunchy. Anyway, my wife and kids finished off all the peanuts real fast, especially my little 2 year old toddler, he just love peanuts! Home toasted groundnuts taste sweeter because it is fresher than commercially toasted ones!

Ingredients
Rice, 1 cup
Pork, 200 gms, cut into slices or minced,
Corn flour, 2 teaspoons
Salt to taste
Pepper, a dash or more
Light Soya Sauce, 3 table spoons
Marmite, 1 teaspoon
Parsley and spring onions for garnishing

Wash rice, add around 4 bowls of water and slow cook it over the stove. Add salt to the rice so that the rice texture would be smooth. Marinade the meat with corn flour, pepper, light soya sauce and marmite. When the porridge is cooked, put in the marinated meat. Boil for a short while. Garnish with parsley, spring onions and roasted peanuts before serving.

Parklin Vegetarian Food Stall (Chap Fan)– Atria Outdoor Food Court

My vegetarian chap fan, brown rice with four dishes (RM4). The boss was wondering why I took his photo! LOL! I normally eat my vegetarian food in Parklin which is located at the Atria, Damansara Jaya outdoor foodcourt. Parklin has been in business in this location for a very long time and I love their vegetarian curry very much. Among my first few posts, when I started my blog 2 years ago was about Parklin Vegetarian Food Stall. This stall offers vegetarian Chap Fan (economical rice) at a reasonable price. All the vegetarian dishes serve here are quite good and tasty. The vegetarian curry dish is a must order whenever I visit Parklin. I ‘tar pau’ (take away) some of the vegetarian curry for my wife once and she loves it very much. The aromatic and creamy vegetarian curry is cooked with cabbage, tofu pok (fried tofu), long beans plus other vegetables. I scooped a large ladle of curry into my organic brown rice (they have white rice as well), a piece of siew ngor, fried crispy fritters with sour cream and some long beans. The boss added more long beans for me when I was about to pay for the food. This plate of vegetarian brown rice with dishes cost me RM4. The vegetarian siew ngor (mock roast duck) and crispy fritter taste real good. I ate the whole plate clean, no bones left ...wait! Vegetarian food where got bones, ha ha ha!

Shortcut Nasi Tomato (tomato rice) with Chicken Kurma, Fish Maw Soup and Tau Miu (Sweet pea sprouts) – EWNS Family Meal

Sometimes when the children grew tired of eating plain rice with dishes, I would cook nasi tomato for them. Normally, evaporated milk and tomato puree are used in cooking nasi tomato. Since this is our daily regular meal, I have to improvise the recipe to a simplified one! Nasi Tomato goes well with Ayam Masak Merah (Red Curry chicken) but since I have a packet of kurma spices in my shelf, I decided to cook chicken kurma instead. I cooked fish maw soup to go with the nasi tomato. This is a fusion east west north south family meal! Ha ha ha!

Ingredients
Rice, 2 cups
Tomato sauce, 5 table spoons
Star Anise, 2 pcs
Screw pine leaves (pandan), 3 pcs
Garlic, 3 cloves, removes skins
Butter, 1 tablespoon
Salt to taste

Wash rice and put in all the ingredients in the rice cooker. Add water around 10mm above the rice surface. (The amount of water varies for different types of rice used). Serve while still hot.

Pete Simple Yam Rice Recipe


Hi Everyone. Happy New Year! This is my first post for year 2010. The year 2009 end holiday’s season was both hectic and also meaningful for me. I had tons of visitors visiting my home for the last few weeks which left me with very little time to update my blog. I would like to start off 2010 with this simple yam rice recipe which I cooked for my family a few weeks ago. This is the first time I try to cook yam rice. It turns out quite good and my kids love it!

Ingredients
Yam, 1 small, diced
Shallots, 5 pcs, cut into slices and fried until golden brown
Dried Prawns, 2 table spoons,
Soya Sauce, 1 table spoon
Black soya sauce, ½ teaspoon
Salt to taste
Spring Onions, 3 stalks, cut into small pieces for garnishing
Rice, 2 small cups
Char Siew (optional), cut into small pieces
Oyster Sauce, 1 table spoon (optional)

Use a little of the leftover oil from the fried shallots to sautéed the dried prawns and yam until fragrant. Add in the washed rice, salt to taste, oyster sauce, dark soya sauce and light soya sauce. Fry until the mixture has nice aroma. Put the fried rice into a rice cooker and add water. Set it to rice cooking mode. Garnish the yam rice with spring onions and fried shallots. I boiled some Shanghai vegetable soup to go with the yam rice. The sour and slightly spicy Shanghai vegetable soup complements the rich yam rice taste.

Fried Porridge Recipe

Nibong Tebal and Serdang which are located in the Northern states are famous for its’ Fried Porridge. There used to be a Nibong Tebal Fried Porridge branch in Manjalara, Kepong but it has since been closed down. The lady boss told me that she had a hard time looking for workers to help out in the restaurant, so they just closed it down. She set up a Penang Tua Pan(wat tan hor) stall with two of her workers in Kedai Kopi Yat Ka which is not far away from the original restaurant. They don’t sell fried porridge in this stall but only noodles and tuapan. Anyway, I got some leftover rice and I tried to make fried porridge with it for supper. Here is the recipe of my fried porridge.

Ingredients
Rice, 1 bowl
Garlic, 3 pcs, chopped finely
Ginger, 1”x1”x1”, cut into fine strips
Roast pork, 7 pcs
Dark Soya Sauce, 1 teaspoon
Light soya sauce, 2 table spoon
Marmite, 1 teaspoon
Oyster sauce, 1 teaspoon
Salt to taste
Long beans, 3 stalks, cut into small pieces
Salt to taste S
esame seed oil, ½ teaspoon
Cilantro (daun sup) for garnishing

Put some vegetable oil in hot wok and sautéed ginger & garlic until fragrant. Add in the roast pork, dark soya sauce, light soya sauce, marmite, oyster sauce and long beans. Fry until the long beans are cooked. Put in the rice. Fry for a short while. Put the rice aside. Put 2 bowls of water in pot and bring to a boil. Add in the rice and let it simmer for a short while. Add salt to taste. Garnish with cilantro and serve!

Peteformation Nasi Lemak (Malaysian Coconut Milk Rice) Recipe

Nasi Lemak (coconut milk rice) is one of the most popular foods for Malaysian especially for breakfast. I have modified this nasi lemak recipe a little bit to suit my children taste buds. Instead of using normal anchovies, I used dried white bait anchovies which is more crispy and easy for them to eat because they are smaller in size. I cook vegetarian curry with long beans and okra as gravy for the nasi lemak.

Rice
Milk from ½ coconuts
Rice, 2 small cups
Pandan (screw pines) leaves, 3 pcs
A little salt

Wash rice and add in the coconut milk up to around 2cm above the rice. Put in the pandan leaves and salt. You can steam or cook the rice in a rice cooker. Stir the rice with a fork or wooden ladle immediately after it is cooked so that the coconut milk will be mixed well with the rice.

Wong Kee Pudu Hailam Chicken Rice and Famous Roast Pork, KL

Wong Kee requires no introduction. This place is very famous in KL for its’ roast pork. I had lunch in Wong Kee two weeks ago. There were five of us and we ordered a plate of roast pork and char siew (bbq pork). The roast pork is very tasty, tender and the skin is the crunchiest I ever tasted. No wonder this place is so famous. The Char Siew tasted ok only. They start business at 12.30noon. The total bill for 5 people came out to be RM76.30, pricey but the roast pork is damm good!

Thian Heong Restaurant Taman Segar – Duck, Chicken and Barbecue Pork Rice.

Duck Rice best eaten with lots of chili............The restaurant occupies 2 shoplots It has been quite some time since I last visited Leisure Mall in Cheras, Kuala Lumpur. There is a Barbecue meat rice shop in this area that I have not been back to for quite a while. Thain Heong has a variety of barbecue dishes like duck, chicken, char siew(sweet pork), sesame seed meat, barbecue ribs and Chinese barbecue liver sausage. You can also order side dishes like double boiled soups. It was still early when I reach there and there were only 4 to 5 patrons inside the restaurant. I ordered duck rice and it was served with complimentary soup. The duck that was served with sweet sauce tasted ok. One thing I like about this restaurant is they leave the chili in containers on the table and you can help yourself to it as much as you can. I wash down my lunch with the ginseng roots drinks.
