Simple Recipe – Curry Chicken without Coconut Milk (Santan)



I normally cook curry chicken without coconut milk and here is the recipe.

Ingredients

½ Chicken, cut into small pieces
½ a bowl of curry powder (Allagapa or Adabi)
Salt to taste
½ a bowl of water
1 tablespoon of butter
3 pcs of star anise (Bunga Lawang)
6 pieces of cloves (Bunga Cengkih)
2 pcs of cinnamon (kayu manis)
5 table spoons of oil
2 large potatoes skinned and cut into eight pieces each.

Deep fried until golden brown and soft 2 stalks of curry leaves (optional)

Blend this 8 shallots, 2 stalks of serai (lemongrass)

Heat up wok and put oil. Sautéed blended ingredients, curry leaves, star anise, cloves and cinnamon under slow fire. Mix the dry curry powder with some water and put in to the wok. Sautéed till fragrant. Add in the chicken and stir slowly. If the mixture is too dry add a little bit of water. Add in the potato and stir until the chicken is cooked. Put in the butter and salt to taste. Add a little bit of water but the curry should not be too watery. Bring to a boil and serve. Eat with steamed rice or bread.

You can try replace the santa with milk.

Josephine : Yes, but evaporated milk lefovers cannot be kept too long, it will turn bad very fast. I prefer to use butter.

Calvin : Bro, My cooking so so only lar, still have a lot more to learn lorrr!

Oh? Curry without coconut milk will be nice or not ar? Normally i like the one with c. milk.

Pete... I love the non-coconut version of curry...very 'kick'. My mom used to cook this curry for me...she said, it's ala 'mamak'. Best eaten wif nasi briyani too! Wuhooo!

Chris : It taste ok and almost the same as the coconut version if you put in more oil.

Kikey : Mom's cooking is still the best!

Mommy : Yes it is healthier than using santan.

Cleff : Original Indian/Mamak cooking actually uses very little coconut milk.

I normally replace the santan with milk (Carnation evaporated milk)as I love my curry to be a bit creamy. Maybe you do not have access to fresh spices there, using those would taste a bit less bitter. so when is the next cookout?? Haha :P

Criz : The curry will be bitter is the spices(cinnamon, star anise and cloves) are overcooked when frying it in hot oil or the stove fire is too strong. Otherwise it will be ok.
