Recipe- Porridge from Leftover Roast Chicken
I have some leftover roast chicken that I bought from Tesco Mutiara. No one wants to eat the chicken breast meat because it is too dry. I decided to have a light lunch of simple leftover roast chicken porridge, which goes down well into the tummy on a hot day.
All the ingredients ready.......................................Garlic and long beans
Frying the ingredients...........................................Porridge all ready to eat!
Ingredients
Roast Chicken, remove bones and break meat into strips
Salted fish meat, 1 piece, cut into small chunks
Salted Vegetable (ham choi), 3 leaves, cut into small chunks
Garlic, 5 pcs, chopped
Ginger, 1”x2”x1”, cut into small strips
Long Beans, 3 pcs, cut into small pieces
Dried Prawns, 2 table spoons, soak to soften and chopped into small pieces
Soya sauce, 3 table spoons
Pepper, ½ teaspoon
Salt, to taste
Rice, 1 small cup, cooked in 3 bowls of water to make porridge
Heat up wok and add 2 table spoons of vegetable oil. Stir fry ginger, dried prawn, garlic and salted fish until fragrant. Add roast chicken and long beans. Fry for a short while. Put all of the fried ingredients into the porridge. Add salted vegetable to the porridge. Add soya sauce, pepper and salt to taste.
